Winemaking: Indigenous yeasts, 15 days whole cluster maceration, no punching down or pumping over, 8 months aging on fine lees, no added sulfites

🍷 Serve at 16/17°C, decant 1 hour before serving, aging potential 5-6 years

Vincent Ruiz, a talented young winemaker from Ardèche who worked with Domaine Franck Balthazar for several years! He started his own cuvées in 2020. The wines are sincere, with beautiful purity and finesse, a truly wonderful discovery. He is also part of the quartet of winemakers now established on the alpine slopes at Domaine du Gringet, continuing the work of Dominique Belluard in Ayse.
