Mas des Chimères is one of the leading estates of the Terrasses du Larzac appellation. Located in the commune of Octon, on the edge of Lake Salagou, Guilhem Dardé established his own winery in 1993. He began vinifying the grapes that had previously been sold to the local cooperative and ended the family’s traditional mixed farming practices.
Describing himself as a paysan-vigneron (farmer-winemaker), Guilhem has worked organically from the outset, guided by respect for life and a constant search for the truest expression of his complex terroirs. Some parcels rest on red soils, others on basaltic ones, giving rise to wines of remarkable finesse, mineral freshness, and aromatic complexity. Since 2008, his daughter Maguelone has joined her parents in running the estate.
