Grape varieties: 55% Syrah & 45% Malbec

Terroir: Clay-limestone

Aging: 30 months in 500L barrels and 18HL foudres. Bottling takes place
without filtration after 30 months of aging.

Tasting: Wine with aromas of blueberry, prune, with a hint of white pepper. The tannins are fine and the palate is smooth and deep.

In the village of Assignan, Hildegard Horat and Alioune Diop cultivate 8 hectares at an altitude of 300 meters, in a wind-swept region (no less than 13 different winds) and make wine in old buildings that are said to have belonged to the Knights of the Order of Malta. Malbec, Syrah, Cabernet Franc and Sauvignon, as well as Viognier and a surprising Petite Arvine reminiscent of Hildegard's Swiss origins, are grown organically and vinified with little or no intervention.
