Grape variety: Sauvignon Blanc

Terroir: Vines averaging 30 years of age. Kimmeridgian marl bedrock over 5 hectares, with a south-west exposure on the sun-drenched terroir of Morogues.

Vinification / Ageing: Direct pressing on arrival at the cellar; settling; fermentation in stainless-steel tanks; ageing on lees mainly in stainless-steel tanks, with some use of stainless steel vats, wooden vats and barrels; natural fermentation with indigenous yeasts.

Tasting notes: A fine sense of breadth, where white-fleshed fruit highlighted by subtle peppery notes intertwines with a rich, sun-kissed minerality.

Paul-Henry Pellé, born in 1985, grew up in Morogues—like his great-grandfather, grandfather and father before him—and, like them, chose to become a winemaker. He trained at the Beaune viticultural school and completed internships with Olivier Lamy in Saint-Aubin and with Benjamin Leroux at Clos des Epeneaux. From the former, he learned respect for the identity of each terroir and the importance of choosing the right vessels in the cellar; from the latter, he learned the vital role of soil work in respecting the vine.

The estate’s first vintages under his involvement were 2006 and 2007, produced under the watchful eye of Julien Zernott, who had overseen vinification since 1995. In 2007, at the age of 22, Paul-Henry took charge of both vineyards and cellar, supported by Anne (his mother), who has managed the office since the late 1980s. After three generations who founded, built and sustained the estate, he now guides it towards ever-greater finesse and consistent quality.

Since his return, developments in both vineyard and cellar practices have enabled the production of precise wines with each vintage. Every bottle reflects the terroir and the year that shaped it. His aim is simple: the pure expression of terroir.
