Grape variety: Chenin
Terroir: High-altitude terroir of the Quercy Blanc, with Stampian, Kimmeridgian and siderolithic clay-limestone soils
Vinification: Indigenous yeasts, vinified without sulphites, direct pressing, aged in oak foudres and clay jars on fine lees for 12 months without sulphites (1 gram added at bottling). Total SOâ‚‚ < 27 mg/l
Tasting notes: A pure sensation, like drinking rock water; taut and refreshing. Lemon and green apple lead into a powdery finish where fresh almond plays its slightly bitter note
🍷 Serving temperature: 10–12 °C, with the bottle opened 30 minutes in advance.

Clos Troteligotte covers 19 hectares at altitude, surrounded by a forest setting on Kimmeridgian and siderolithic limestone bedrock for the reds, and Stampian limestone for the whites. Emmanuel Rybinski practises biodynamic farming, in harmony with the many energies of the site. Wine and terroir are inseparable here, and Emmanuel crafts several Cahors cuvées distinguished by the iron-rich nature of their soils.
