10-day maceration of whole bunches under gas, tank fermentation, 12 months aging in barrel + 12 months in bottle.

Tasting notes: A refined, elegant cuvée, with just the right amount of character. The nose offers crushed wild strawberries, a hint of pepper, with an elegant palate and light, fine-grained tannins. A beautiful wine that will stand out with many South-Western specialties.

Pauline Broqua first worked as a sommelier in Toulouse (already natural wine...) but the desire for vines was stronger! She headed to Banyuls in Roussillon where she worked at Domaine Yoyo, then to Aveyron with Nicolas Carmarans where Pauline perfected her apprenticeship. She took the plunge and settled in Aveyron in 2018, in Entraygues sur Tuyère to be exact. She is now flying solo: 2 hectares of vines initially, then 7ha since 2019... A talent to watch!
