Grape variety: 100% Chardonnay
x1 Le Chemin des Plants 2020 – Extra Brut, 2.2 g/L
Terroir: A selection of all the estate’s Chardonnays, namely Les Fourches (Vandières), Mont Bernard (Reuil), and Moyens du Cochant (Cramant). Selected barrels from these different lieux-dits. Bottled on 15 July 2021, disgorged on 24 February 2025. Spontaneous fermentation in oak barrels, natural cold stabilisation.

x1 Jossias 2020 – Extra Brut, 2.2 g/L
South-east-facing parcel in Vandières, clay-limestone soils. Bottled on 15 July 2021, disgorged on 24 February 2025. Spontaneous fermentation in oak barrels, natural cold stabilisation.
Grape variety: 100% Pinot Noir
x1 Naturellement 2022 – Brut Nature, dosage 0 g/L
Terroir: Clay-limestone soils, Marne Valley, right bank, Châtillon-sur-Marne & Reuil.
Vinification: 100% woodland environment, indigenous yeasts, ageing on fine lees.
Ageing: Fermentation in oak barrels, natural cold stabilisation; neither filtered nor fined. Bottled on 13 July 2023, disgorged on 16 December 2024.
Grape variety: 100% Meunier

Champagne Cazé-Thibaut is located in Châtillon-sur-Marne, between Épernay and Château-Thierry. Fabien Cazé took over the family estate in 2007 but waited until 2013 to release his first vintage—allowing the soils and vines the necessary time to fully absorb the transition from conventional farming to a natural approach. Fabien has taken the time to craft Champagnes in his own image: a parcel-by-parcel philosophy built on observation and experimentation, constantly refining his understanding. It is an approach rooted in continual questioning and reassessment, always striving to reveal the living, expressive side of his high-slope terroirs where the bedrock breaks through the surface. We are delighted to introduce you to his work.
