DORIAN DEJEAN Saint-François 2022 IGP Côtes Catalanes 75cl White

€3770 EUR

Tasting notes: A truly unique tasting experience! The nose is captivating, with aromas of marzipan, candied orange and hibiscus, accompanied by a subtle, elegant oxidative note reminiscent of a great Champagne. The palate is equally impressive, with a wonderful texture revealing orange zest, hints of hazelnut, spices and a delicate infusion of red berries and hibiscus. A wine of remarkable precision and definition. Absolutely stunning!

🍷 Serving temperature: 10-12°C. Decant for one hour before serving to fully appreciate the aromatic complexity of this cuvée.

Originally from Narbonne, Dorian Déjean has been passionate about nature since his childhood in the Corbières and has followed a rather unusual path! After spending some time in the world of bullfighting, he turned his attention to wine, graduating in oenology from Montpellier SupAgro in 2016.

He went on to gain experience alongside some outstanding winemakers, including Marcel Deiss in Alsace, Eric Forest in the Mâconnais and Viña Koyle in Chile. In 2020, he returned to his roots in the Roussillon, becoming assistant vineyard manager at Olivier Pithon's estate in Calce, before acquiring his first vines in 2021.

Today, he farms around 3 hectares between Calce, Baixas and the Corbières, with a deeply respectful approach to nature, inspired by organic and biodynamic farming. Passionate about botany, he favours natural ground cover, minimal soil disturbance and plant-based preparations to encourage biodiversity.

The same philosophy continues in the cellar, with indigenous yeasts, gravity-fed winemaking, no fining or filtration, and very little sulphur, occasionally added at bottling.

An exciting young estate well worth discovering!
