DORIAN DEJEAN Sainte Colombe 2025 VDF (Côtes Catalanes) 75cl Blouge
Grape varieties: Field blend of Carignan Blanc and Noir, and Grenache Noir, Blanc and Gris.
Winemaking: Semi-carbonic maceration, followed by 8 months of ageing on the lees in 400-litre oak barrels.
Terroir: Dolomitic limestone soils.
Tasting notes: A wine of pure pleasure! The nose bursts with fresh strawberries and cherries, while floral notes and a hint of pencil lead add lovely complexity. The palate is delicate and elegant, brimming with fresh red fruit. Floral nuances and a touch of graphite bring depth and vibrancy to this beautifully silky, fine-tannined wine.
🍷 Serving temperature: 15°C. Decant for one hour before serving to fully appreciate the aromatic complexity of this cuvée.
Originally from Narbonne, Dorian Déjean has been passionate about nature since his childhood in the Corbières and has followed a rather unusual path! After spending some time in the world of bullfighting, he turned his attention to wine, graduating in oenology from Montpellier SupAgro in 2016.
He went on to gain experience alongside some outstanding winemakers, including Marcel Deiss in Alsace, Eric Forest in the Mâconnais and Viña Koyle in Chile. In 2020, he returned to his roots in the Roussillon, becoming assistant vineyard manager at Olivier Pithon's estate in Calce, before acquiring his first vines in 2021.
Today, he farms around 3 hectares between Calce, Baixas and the Corbières, with a deeply respectful approach to nature, inspired by organic and biodynamic farming. Passionate about botany, he favours natural ground cover, minimal soil disturbance and plant-based preparations to encourage biodiversity.
The same philosophy continues in the cellar, with indigenous yeasts, gravity-fed winemaking, no fining or filtration, and very little sulphur, occasionally added at bottling.
An exciting young estate well worth discovering!
