Vinification: 2/3 direct press, 1/3 whole bunches
Tasting notes: A fresh, juicy nose with floral aromatics, peony, orange zest. The palate is juicy, elegant, and very fresh, with silky-smooth tannins.
🍷 Serving temperature: 16°C Decant 2 hours before serving to fully enjoy the aromatic expression of this cuvée.
"Originally from Lyon, and after eight years in Burgundy where I was able to deepen my passion for the world of wine, I decided to turn that passion into a profession and produce my own wines. The region of the Pyrénées-Orientales, and more specifically, the village of Calce, quickly became an obvious choice. The richness of the landscapes, the great diversity of terroirs, and the energy of the local winemakers naturally drew me to this unique village.
With the aim of producing high-quality wines, I chose to work the vines and make the wines using organic and biodynamic farming methods, which also align with my core values. Our philosophy is to minimise the carbon footprint of our professional activity as much as possible. The work is certainly more time-consuming, but all the more rewarding."
