Grape Variety: 100% Chardonnay from the Premier Cru La Forest parcel, located on the left bank of Chablis.

Terroir: Clay-limestone soils typical of the Kimmeridgian, rich in marine fossils. Southeast exposure providing beautiful ripeness while maintaining freshness. Vines cultivated according to uncertified organic and biodynamic principles.

Winemaking: Fermentation in stainless steel tanks and old oak barrels, without excessive lees stirring. Long aging on fine lees. Bottling without extensive filtration to preserve the pure expression of the terroir.

Tasting: Pale straw-yellow color. Complex nose combining lemon zest, white pear, oyster shell, white flowers, and a hint of honey and iodine. On the palate, the wine is vibrant, taut, with precise acidity, a beautiful chalky mineral density, and a very persistent saline finish.

🍷 Serve at 11–12°C, possibly decant lightly in its youth. Best enjoyed from 2027, with remarkable aging potential until 2035 and beyond.

An emblematic domain in Chablis, Domaine Dauvissat is today among Burgundy's greatest white wines. The domain has been cultivated for three generations. René, Vincent's father, and before him Robert, his grandfather, already worked their vines and bottled their own wines. Vincent has been running the domain that bears his name since 1989. Today, Étiennette, Vincent's daughter, also works alongside her father.

The domain's 12 hectares of vines cover the four local appellations: Petit Chablis, Chablis, Chablis 1er Cru (6 ha), and Grand Cru (2.7 ha). The vines have been cultivated biodynamically since 2002 without claiming certification. Vinifications are very low-intervention, with little sulfur. The wines have a very great aging capacity; each of the climats will develop and fully reveal the complexity of its terroir.
