Very old vineyard on the mountainside, organically farmed, worked manually "in the old way" because it is difficult to mechanize.

- Dolomitic parent rock.
This is the interplay of two fruits: apples and grapes from the Bordatto estate. Destemmed grapes, optimal phenolic ripeness (perfectly ripe tannins). Fortified on the skins. Short maceration for maximum fruitiness. Cider distilled and aged for 24 months in two-year-old barrels. And so, after two years of work between the vineyard, the orchard, and the still, JOKO was born.

Domaine Bordatto is a very small estate consisting of fruit trees (apples) and vines, located in the Basque Country near St Jean Pied de Port in Jaxu. An estate that works with the utmost respect for its terroir.
