Dominique grew up in the Jura, surrounded by his parents' vineyards, which were already being farmed organically back in 1968! What better way to develop a deep respect for nature than to grow up with parents who have long been committed to working in harmony with it?

He began his winemaking journey alongside his parents before establishing an estate between the Mâconnais and Beaujolais with his partner. Eventually, their desire for a change of scenery led them to relocate their winemaking business to the Corbières, where they spent around twenty years at Domaine Les Deux Ânes.

Having fallen in love with the region, Dominique went on to establish Dom & Terre in Lagrasse in 2017. Today, he runs the estate alongside his son, who has since joined him.

Unsurprisingly, the estate is farmed entirely organically and goes even further, reflecting Dominique's deeply rooted convictions and lifelong commitment to nature.

Starting with 6 hectares of organically farmed vines, they now cultivate 17 hectares biodynamically. The vineyards feature several grape varieties across two main terroirs: calcareous alluvial soils and clay-limestone hillsides.

The wines are carefully vinified according to the characteristics of each vintage, always using indigenous yeasts.

A few exciting new projects may also be on the horizon, including a grape-based gin infused with locally sourced botanicals... but shhh, more to come in the next episode!
