It was bottled by gravity, unfiltered and uncoloured, at 48%, after a slow reduction over several months.
AGE: 36 months in a humid cellar
AGEING: Blend of different Cognac casks, of different sizes and ages.
Tasting notes: Quite straightforward, linear and delicate with slightly fruity floral notes - yellow stone fruit, grape and elderberry. On the palate, subtle notes of precious wood, honey, baked apple and a warm vanilla touch. Very elegant finish without harshness.
The Twelve distillery (Douze, like the department...) is located in Laguiole on the Aubrac plateau. Its Celtic origins, peat bogs and pure water echo the whisky's motherlands: Scotland and Ireland. The French distillery is established at an altitude of over 1000 meters!
Its symbol is the bull, originating from ancient times. The first letter of the Proto-Sinaitic alphabet, one of the oldest known, the logo aims to honour the emblematic animal of Aubrac, but also the region's volcanic geology, millions of years old, guaranteeing the exceptional water that is the basis of this whisky.
