In 2024, Romain trades the Corsican shores for the Pyrenean peaks, and his teacher's chalk for the wine merchant's corkscrew; a hobby that has become a true calling.
He joins Franck Thomas's "Sommelier Caviste" training program in Bayonne, guided by Damien Mazars, where he distinguishes himself brilliantly: top of his class… and of all classes in France!
His work-study period takes place here, at Cave du Palais, under the wing of Thomas Buisson. Blind tastings, visits to winemakers, exchanges with customers… he fully immerses himself in the reality of the profession.
