Thomas BUISSON
After a childhood in Provence, in the city of perfumes, Grasse… and musical studies, Thomas began his professional life as a musician performing in various orchestras and chamber ensembles. At the same time, he discovered a passion for wine, which he decided to pursue.
In 1993, at the Centre de Vins de Propriété (Paris 18th), where he worked for 7 years, observing, patiently learning his trade, making his first contacts, and absorbing both all that he could. Regular visits to vineyards in Bordeaux, Champagne, Loire, and Burgundy, as well as the Jura and Northern Rhône, were a revelation. He got to meet great winemakers and taste iconic wines. He developed a deep preference for Pinot Noir, Syrah, and Pomerol. He later ran the Cave du Panthéon (Paris 5th), which was already focused on independent, passionate and true winemakers, pioneers of today's "natural" wines. It was there that he began his studies to obtain his Brevet Professionnel de Viticulteur-Œnologue at the Agropolis University in Montpellier in 2002.During his studies, he made his own wine in 2002 and 2003 at Murviel lès Montpellier, when e rented vineyards for two years. He expanded his practical experience in Languedoc-Roussillon at Domaine La Marfée and Domaine Belles Pierres, as well as in Burgundy at Domaine Roulot in Meursault. He then stayed in the region and managed a wine-bookshop and press outlet in Lyon, "Vins Quotidiens."
Thomas continued his journey as a sommelier in restaurants on the French Riviera, particularly at "Les Vieux Murs" on the ramparts of old Antibes and at the "La Palme d'Or" at the Hotel Martinez in Cannes (two Michelin stars). He arrived in the Jurançon hills in 2007 at the invitation of a female winemaker, where he served as estate manager. With over 27 years of experience within various wine-related fields, he opened his own wine shop in 2010, "Cave du Palais".
Over the years, he has built strong relationships with many winemakers across France, prioritising discovery, product originality, and respect for the land and nature.
