BORDATTO Cidre Basa Jaun 2023 75cl Pays Basque

Basa Jaun Cider (wild man), aromas of dried fruits, subtle notes of apples and pears. Lush and generous, it’s a true, excellent pet nat! A slightly bitter finish completes a beautiful length and ensures refreshment. It pairs well with cured meats (chorizo, young ham) at aperitif time or with hazelnuts, walnuts, or chestnuts, quenching your thirst on a hot afternoon.

Blend of 15 local apple varieties selected according to ripeness: (Ondo Motxa, Eri Sagarra, Anisa, Gordin Xuri, Minxuri, Azau sagarra, Eztirotxia, Geza Xuria, Mandoburua, Patzulua)

Cider-making: Direct pressing, varieties separated. Settling followed by fermentation in stainless steel tanks (about 4 months), using only indigenous yeasts. Work on lees. Natural sparkling in the bottle for two months (end of fermentation in bottles with no added sweet liquor or yeasts).

Tasting: Fruit, finesse, tension, elegant tannins, light refreshing bitterness.
Pairs well with meats, cheeses, and charcuterie.

Best served chilled (about 7°C), store the bottle upright, protected from light, at a temperature not exceeding 16°C. Aging potential: 5 to 10 years. All their ciders are vintage-dated.

 

Domaine Bordatto is a charming, family-owned estate situated in Jaxu, close to Saint-Jean-Pied-de-Port in the Pays Basque region of France. Founded in 2001 by Pascale and Bixintxo Aphaule, the estate covers 4.5 hectares, with 3.5 hectares dedicated to apple orchards and 1 hectare to vineyards. The estate operates under organic principles, focusing on sustainable and respectful cultivation of the land.

The vineyards are planted with classic Basque grape varieties, such as Tannat, Marselan, and Cabernet Franc for the wine and in the apple orchards, they cultivate old local varieties such as Anisa, Eztika, and Erri Sagarra, which are well-suited for organic farming and contribute to the distinctive character of their products.
