Vinification / Ageing: Direct pressing upon arrival at the winery; settling of the must; fermentation in stainless steel tanks; ageing on the lees in stainless steel. Natural fermentation with indigenous yeasts.
Tasting notes: A pleasant, floral and fruity nose with zesty notes of grapefruit and lemon. The palate is both vibrant and rounded, with a delicately floral character and a crisp, clean attack!
🍷 Serve at 9–10°C
Paul-Henry Pellé was born in 1985 and grew up in Morogues, just like his great-grandfather, grandfather, and father before him. True to his family heritage, he too chose the path of the vine.
He trained at the Beaune Wine School, and completed internships with Olivier Lamy in Saint-Aubin and Benjamin Leroux at Clos des Epeneaux. Working alongside Olivier Lamy, he learned to respect the identity of each terroir and to carefully select the right vessels in the cellar. With Benjamin Leroux, he deepened his understanding of soil management; essential for preserving the health of the vines.
His first vintages at Domaine Pellé were in 2006 and 2007, crafted under the experienced eye of Julien Zernott, who had overseen vinifications since 1995. In 2007, at just 22 years old, Paul-Henry took over both the vineyard and the cellar. After three generations who founded, built, and grew the estate, he brought a new energy; one focused on finesse and consistency.
Since his arrival, changes in both vineyard and cellar practices have allowed for wines of ever-greater precision. Each cuvée faithfully reflects its terroir and vintage. His ambition: a pure and honest expression of place.
