Les Pipelettes - rue Valérie Meunier
She is "the" chef of #pau. #laetitiasarthou has been running her bistronomic restaurant #lespipelettes as a one-woman show for eight years now. Having worked at Chanzy in Libourne, at the Auberge de la Truffe in Sorge, and at Les Fermes de Marie in Megève with Nicolas Le Bec, as well as at Michel Sarran in Toulouse, Laëtitia Sarthou offers a unique menu for €25 and an evening menu for €45 with 4 options.
On the menu:
. Boned and reworked pig's trotters en crépinette with a rose geranium sauce
. Brandade ravioli, marinated vegetables, exotic vinegar, strawberries
. Line-caught hake from Saint-Jean-de-Luz. Asparagus marinated with tiger balm mint and peas marinated with mixu (Vietnamese coriander)
. Raspberry tart, pastry cream, and nasturtiums

A lunch at Quentin Maysou's, the wonder boy of Pau, at L'Interprète. Having worked at the Grand Hôtel in Saint-Jean-de-Luz and the Splendid in Dax, he returned to his paternal Béarn here.

Omnivore - Place Gramont
Omnivore is the very gourmet brasserie of Stéphane Cunin, a native of Dommartin-lès-Remiremont in the Vosges, who settled in Béarn. He worked in Paris at Maison Blanche during the time of the Pourcel brothers, as well as at the Beef Club, not to mention Beau Rivage and Les Bas Rupts in Gérardmer, and also at Château d'Adomesnil with Michel Million in Lunéville.
Brasserie d'Orléans - rue d'Orléans
Jean-Pierre Festino, a native of Meaux, who attended hospitality school in Toulouse and spent fifteen years in Nice, transformed an old Parisian-style bistro, reminiscent of a Lyonnais "bouchon," into a gourmet Béarnese spot. The service is provided by the funny and uninhibited Cindy, a true Pau local, who brings life to the establishment @brasseriedorleans64
