CHÂTEAU BOUISSET
Christophe Barbier of Château Bouisset has been cultivating his family vineyard since the 1990s on former salt marshes (part of the estate is located in the Aude, the other on La Clape). It's a daily challenge, as salt can be an excellent ally for the character it brings to the grapes, but also an enemy if the saline water table rises too much. In the past, his ancestors carried out winter submersions to put pressure on the saline water table and prevent salt from rising into the vineyard. This also aimed to protect their vines from phylloxera, the devastating aphid that decimated a large part of French vineyards in the late 19th century.
