Moelleux de Pomme. Givre is a non-sparkling, mellow "apple wine" crafted using a unique method developed by Domaine Dupont. Givre offers rich aromas and a distinctive sweetness. Givre was awarded at the Normandy Agri-Food Innovation Competition in 2006. Certified organic.
Variety: 60% bittersweet apples, 40% tart apples
Tasting Notes: Fresh, rich attack. Good balance of acidity and smoothness, aromas of caramelized apples and candied black fruits. A very fresh finish.

Cider ferments in stainless steel tanks. While Calvados is obtained by double distillation (high-temperature extraction) of cider, Givre is obtained by bringing the cider to very low temperatures.
At these temperatures, ice crystals form. They are separated from the liquid, which has become enriched in sugar, alcohol, and solids. Eight cooling stages are necessary to produce Givre.

The Dupont family has a long tradition in apple production in the Pays d'Auge, a small corner of Normandy, dating back to 1887. In 1980, Etienne Dupont took over the family estate, succeeding his father Louis. He expanded and modernized the estate while refocusing it on cider and Calvados production. The old orchard was redeveloped, and ten new hectares of dwarf apple trees were planted. He visited Cognac to absorb the best techniques in double distillation. Etienne Dupont was also instrumental in creating the A.O.C. Pays d'Auge appellation. The poor soils of the Pays d'Auge, consisting of marl and marly limestone from the Oxfordian period (secondary era), limit the growth of the trees, which thus produce only small fruits. The aromatic intensity is therefore stronger, and the skin/pulp ratio favors the extraction of tannins. The level of precision achieved in their range is comparable to what one would seek in wines.
