Patrick Rols, supported by his brother Joël, is established on the heights of the magnificent village of Conques in Aveyron! The estate covers a total of 6 hectares, 4.5 red and 1.5 white, on superb schist terroirs. The project began in 2003, and at the time the Marcillac AOC refused them permission to plant the Fer Servadou grape variety (the famous local Mansois!) because Conques is not part of this appellation area. They therefore decided to plant 50% Merlot, supplemented with a little Cabernet Franc and Cabernet Sauvignon; for the whites, it's Chardonnay and Chenin partly planted on terraces. The wines are entirely natural, with no added sulfites; the reds are infused for a long time to promote slow and gentle extraction of the tannins. Their wines have surprising natural acidity given by the schists, which bring minerality, length, and dimension.
