Cyril Zangs is the natural winemaker of apples! First inspired by books, he then dedicated himself to caring for the branches of these beautiful apples!! 69 varieties of apples are used, with their different flavors (sweet, bittersweet, bitter, tangy, sour), sourced from 15 to 60-year-old standard orchards. From early October to mid-December, the fruits are harvested at optimal ripeness using tarpaulins laid under the apple trees to preserve the fruit and keep it clean and healthy. The apples finish ripening in storage. Then follows a meticulous process similar to that for a fine bottle of champagne: secondary fermentation, riddling rack, and disgorging... These ciders are undeniably uninhibited, natural, and delicious for food and wine pairings—or rather, cider pairings!
