Patrick Rols, supported by his brother Joël, is based in the hills of the magnificent village of Conques in Aveyron! The estate covers a total of 6 hectares, 4.5 for red and 1.5 for white, on superb schist soils. The project began in 2003, and at the time, the Marcillac AOC refused them permission to plant the Fer Servadou grape variety (the famous local Mansois!) because Conques is not part of this appellation area. They therefore decided to plant 50% Merlot, complemented by a little Cabernet Franc and Cabernet Sauvignon; for the whites, Chardonnay and Chenin are planted, partly on terraces. The wines are entirely natural, with no added sulfites. The reds are infused for a long time to encourage slow and gentle tannin extraction. Their wines have surprising natural acidity from the schist, which provides minerality, length, and complexity.
