Vinification / Ageing : Blanc . Noir is a cuvée made with red and white grape varieties. Both colors were pressed together. A very hot vintage that was very slow to ferment. A lot of patience was required to bring this cuvée to fruition: 3 years of ageing in barrels without topping up. No filtration or fining.
Tasting notes : A gastronomic wine, with an autolytic nose and a buttery, salty and bitter palate! Incredible character...
🍷 Serving temperature 11-12°C, slight fizz on opening
The Frères Soulier estate consists of 20 contiguous hectares of land in Saint Hilaire d'Ozilhan, just a stone's throw from the Pont du Gard, on a north-facing terroir made of the same type of white limestone. The objective is to create an autonomous site with great diversity, without neighbours and minimal travel. 11 hectares of vines, 2 hectares of olive trees, 2 hectares of garrigue and 5 hectares of meadows for their animals.
