MAS DES CHIMÈRES
Mas des Chimères is one of the top names in the Terrasses du Larzac... Located in the commune of Octon on the edge of Lac du Salagou, Guilhem Dardé established his own winery in 1993. He began to vinify the grapes himself, which had previously been sold to the cooperative winery, and stopped polyculture (which was the family's traditional way of working at the time). Guilhem, who likes to describe himself as a farmer-vintner, has worked organically from the start, respecting living things and always seeking the best expression of his complex terroirs. Sometimes red soils, sometimes more basaltic soils, the wines are of rare finesse, mineral freshness, and aromatic complexity. Since 2008, his daughter Maguelone has also been working alongside her parents.
