Charlotte and Louis Pérot have been settled in the small village of Puy-l'Evêque in the Lot region since 2015. The idea of making natural wine is obviously at the heart of their project. The couple left Paris for a project that would bring them more meaning. Louis trained in Beaune, and they bought a farm to renovate, which included about twenty hectares of contiguous land with fruit trees, woods, and meadows. The vineyard is managed using agroforestry principles, with alternating crops to create a symbiosis in biodiversity. The idea is to keep the farm to a reasonable and modest size so that most of the work can be done by the two of them. There are several small plots and several grape varieties, such as old Cot vines, Merlot, Chenin, Mauzac, and other endemic or hybrid varieties... The winemaking is low-intervention, without inputs, 100% grape, with particular attention to hygiene. The wines are then aged in an old quarry dug into the limestone rock.
