Neither filtered nor fined, 12 months on lees; disgorged version
Tasting: A surprising undisgorged sparkling wine with springtime notes of orchard fruits, juicy and tangy, with a hint of residual sugar that gives it charm without making it heavy.

The story told by Julien: It all started with my maternal grandfather's vineyard in Le Bourdet in the south of Deux-Sèvres. The grape harvest each year was an unmissable event at the beginning of the school year throughout my youth.
These few dozen ares of hybrid vines allowed Pépé to fill his fiber vats each year for his annual consumption and a few demijohns for the traditional pineau.
There were few takers for the wine, but pineau was another story.
After starting my career in communication and marketing, I went back to school to learn the trade of winemaker for 4 years with Christophe Pueyo in Libourne. I created Chai Côtier in July 2023 next to Bayonne with the desire to make fun and lively wines from organic grapes harvested from winemakers in the Southwest.
