Aging: Partially whole cluster fermentation, aged in vats.

Tasting Notes: Floral and peppery on the nose with great freshness, a pleasant, friendly, and digestible palate, black fruits and spices, a hint of green on the finish; to be enjoyed without moderation! Beware, it's a liter bottle! Pairs perfectly with spicy dishes! Couscous!

Dominique grew up in the Jura region among his parents' vineyards, which were already organically farmed back in 1968! What better way to absorb this philosophy than from parents who have long been convinced by living organisms! He began working with his parents, then created an estate between Mâconnais and Beaujolais with his partner. Later, they longed for something new and moved their operation to the Corbières for about twenty years (Les Deux Anes). In love with the region, Dominique finally created Dom & Terre in Lagrasse in 2017, which he runs with his son who joined him. Naturally, it's an estate entirely farmed organically and even more so, given his deeply held convictions. Starting with 6 hectares already organic, they now cultivate 17 hectares of biodynamic vines. They have several grape varieties across 2 main terroirs: calcareous alluvium and clay-limestone hillsides. The wines are carefully vinified according to the vintage, always with indigenous yeasts.

Some new projects might emerge, like a grape-based gin with some local macerations... but shhh, more to come in the next episode!
