Grape variety: Savagnin

Terroir: deep grey and blue marl, south-west exposure, steep slope, altitude 400 m

Vinification / Aging: alcoholic fermentation in foudre, 10/12 months aging on lees during malolactic fermentation, then aging: oxidative aging, without topping up or racking for a minimum of 75 months (6 and a half years).

🍷 Serve at 14-15°C, can be aged for over 20 years.


Julien Mareschal, a young winemaker on the marly valleys of Pupillin, comprises 5ha of vines. The terroir is on a steep slope, with manual soil work and no chemicals. He is part of this excellent generation of organic/biodynamic winemakers in the Jura, where respect for the terroir is reflected in biodynamic principles, natural grass cover and soil work (ploughing, hilling, harrowing...). Controlled doses of So2 at their minimum, fermentations with indigenous yeasts from the terroir... The domain has been practicing Organic Agriculture since 2012. Julien is very attached to local Jura traditions, as are his cuvées. The Ploussard, Trousseau, Pinot Noir, Chardonnay and Savagnin grape varieties are expressed through different plots whose soils and exposure create their typicity, thus producing terroir wines.
