DOMAINE DU GRINGET Ayze Etraz 2022 Savoie 75cl White

Grape variety: 100% Gringet, old vines planted 1970/1980

Terroir: Limestone scree in a place called "Vers Etraz". This is the most Jura-esque cuvée of the estate. It admirably combines vivacity and maturity. It was from these plots on Etraz that Dominique Belluard used to make his great sparkling wine "Mont Blanc Brut Nature".

Winemaking: Gentle pressing for seven hours, fermentation using indigenous yeasts. Aged on fine lees for 9 months in concrete eggs. No fining or filtration at bottling, then aged in bottle for 10 months. Light addition of sulfites (total sulfur = 12mg/l).
