Grape variety: 100% Sauvignon, unfined and unfiltered
Terroir: A steep, south-facing parcel with marl and limestone soils rich in fossilised shells.
Tasting notes: Power, breadth, vibrancy, and minerality.
🍷 Serve at 10–12°C – Cellaring potential: 10+ years
François Cotat inherited his vines from his father. Three of the finest terroirs in Sancerre. Thanks to his exceptional skill as a vigneron, he quickly became a major figure in the region. He now works just over 2 hectares on the steep hillsides of Chavignol, where the soils are Kimmeridgian marl — dry, stony limestone rich in flint, clay, and silica. Each of his three parcels has its own distinct character: some more fruit-forward, others smokier, but always precise and deeply mineral. His winemaking is minimal intervention, and the wines offer remarkable ageing potential.
