An iodized umami with sweet caramel notes.
Preparation/Tasting : The best of both worlds. Combine artisanal caramel with North Sea dulse seaweed, and an explosive syrup bursts from the cauldron. Delicious in a bold chocolate mousse, over ice cream, or to add a unique twist to an oriental-inspired sauce.
Ingredients : Caramel and dulse infusion (water, sugar, 0.4% dulse), sugar, salt.
Cocktail suggestion :
North Sea Smoke
A smoky "whiskey" on ice, with a touch of the North Sea.
Ingredients :
10 ml of North Sea Caramel Syrup
50 ml of Salt Marsh Peat, < 0.5%, whiskey type
2 drops of Angostura bitters (optional)
Smoked orange zest (optional)
Preparation :
Prepare a nice, large ice cube
Pour the Salt Marsh Peat over it
Add the North Sea caramel syrup and the bitters.
Garnish with orange zest
