1 part lime juice or wild herb vinegar
4 parts sparkling water

The preparation
Put all the ingredients, except the sparkling water, into a shaker.
Add a handful of ice cubes to the shaker.
Get moving !
Pour the mocktail through a strainer into a chilled glass containing (crushed) ice.
Top up with sparkling water.
Garnish with a little of the remaining mint if desired.
