Grape variety: 100% Tannat

Terroir: Tannat from Pichard in Soublecause (65), direct press with a small portion macerated for one day before pressing.
13% ABV. Harvested from September 25th to October 3rd.

Vinification & Ageing: Fermentation and ageing for one year in 500L and 400L barrels (3rd to 5th use), on full lees.

Residual sugar at bottling: 9 g/L.

No added SO₂. Bottled in August 2022.

🍷 Recommended serving: Decant for 2 hours before serving.

Imanol Garay, originally from San Sebastien, is a unique winemaker with a diverse artistic spirit. A former cooper, he crafts wines with a deep intuition and connection to the vineyards. Drawing inspiration from his experiences across the Pyrénées, he sources grapes from both the French and Spanish sides, gradually planting his own vines. His wines are personal and vibrant, reflecting his distinctive approach. Beyond winemaking, Imanol is also a talented artist, painting all of his wine labels, and a gifted pianist. With a piano in the heart of his wine cellar, he plays to his barrels, bringing music into his winemaking process. Currently, he is working on an album of his own compositions, set to be released on vinyl, blending his artistic passions with his craft.
