Once upon a time… La Reine s’Amuse (and today, Amélie de Boyer Montegut)
In 1563, Queen Jeanne d’Albret discovered the Château de Tout-y-Croît, perched on the heights of Béarn (64), at the gateway to the Pyrenees, and gave it its name in honour of the magnificent fruits that were served to her there.
Today, the château is surrounded by a preserved green haven, far from traffic and noise, spanning several dozen hectares farmed organically, where century-old trees and ancient fruit trees punctuate the visitor’s path.
An orchard was replanted in 2024 to supply the majority of the fruit used in La Reine s’Amuse creations: cornelian cherries, elderberries, apples, blackberries, plums, raspberries and cherries. Other fruits are sourced from local producers, also certified organic, such as blueberries and Roussanne peaches. Finally, fruits not available around the château are purchased at market and carefully selected for their quality, French origin, and the shortest possible supply chain (for example: apricots and strawberries).
The sugar used is organic cane sugar, and when a gelling agent is required for certain preparations, agar-agar has been chosen, a natural gelling agent derived from seaweed, renowned for its health benefits.
Everything is prepared with care and love, in the hope of sharing with you a little of the sweetness of this earthly paradise that is Tout-y-Croît.
