The craft brewery La Varette is located in Ibos in the Hautes-Pyrénées (65). The beers focus on natural, indigenous and/or spontaneous fermentations. Benjamin is far from a conventional approach; inspired by the seasons and uses fruits and flowers from his immediate surroundings!
Spontaneously fermented beer aged for 12 months in a Burgundy wine barrel, then matured further in a triple beer barrel.
