Vinification: 100% destemmed and short maceration.
Tasting Notes: A very open nose typical of Cabernet, very ripe, with very spicy and peppery notes. The palate is round and gourmet, floral, with a touch of violet, and a salivating and sapid finish. A delightful small cuvée at only 11° alcohol...!

Guillaume Lavie, after a first experience in Bugey where he was already producing beautiful gastronomic cuvées on a very small rented vineyard, finally found his happiness in the Pays Nantais. Indeed, it is on beautiful plots in the small village of Gorges that he set his sights. In 2020, he became the owner of 10 hectares that belonged to "Denis" (hence the name of one of his cuvées), and thus continued his precise work to produce beautiful gastronomic white wines. His vineyard was immediately converted to organic farming. He has a very rustic and sensible vision of his vineyard. His way of looking at things is holistic; every microorganism has its importance and constitutes a whole. Moreover, for him, no two years are alike in the vineyard, and it is daily observation that dictates whether or not to intervene, when to treat, or when to lay down the grass, for example. In winter, sheep complete his work!
For us, it's always a real pleasure to be able to taste beautiful gastronomic white wines with very, very interesting quality-to-price ratios. Don't hesitate for a moment and try it 😏
