Grape Variety: Chardonnay
Terroir: The vines are located around the village of Chichée, south of Chablis, on the banks of the river "Le Serein". The vines are on hillsides or on the tops of hills around the village, at an altitude of approximately 150m. Most of them face South or Southwest.
Vinification/Aging: It is as non-interventionist as possible. They favor textured, rich, and full-bodied musts. Natural fermentations thanks to the yeasts and lactic bacteria naturally present on our grapes. Aging in stainless steel tanks on lees for as long as possible until bottling before the next harvest. The Chablis "les serres" cuvée remains in tank for 24 months. 35 mg/L of free sulfur at bottling.
Tasting Notes: Aromas of flowers such as linden but also offers more empyreumatic aromas such as licorice. With a beautiful balance and powerful minerality from the marl in which it is rooted, it is a very good wine for cellaring.
The estate was created in 1985 by Nathalie and Isabelle's parents. Since 2007, Nathalie has been managing the estate after studying oenology and gaining professional experience in France and elsewhere. In 2012, Isabelle joined her.
Today, they cultivate 10 hectares of Chardonnay, all with a qualitative and environmentally respectful viticulture.
