Blend: Grand cru white teas from China, verjus, kombucha culture, plant extractions (bitter orange leaves), citron, and bergamot.
Tea Terroir: Fujian Mountains, China
Fujian, a coastal province in southeastern China, just across from Taiwan, is one of the most prestigious tea-growing regions in the world, producing an incredible variety of high-quality teas.
Colour: Bright yellow
Profile: The roundness of white flowers (jasmine) is beautifully balanced by vibrant citrus notes (bergamot, citron), bringing a lively acidity mid-palate. The profile is elegant, with a floral persistence that lingers.
Pairing Suggestions: Scallop carpaccio with passion fruit and yuzu sauce, Roasted apricot crumble, Wild strawberry consommé
