Composition: Grand cru Japanese black & green teas (Benifuuki & Yabukita cultivars), Verjus, Kombucha culture, Osmanthus flower extractions
Tea Terroir: Yame, Kyūshū Island, Japan
The origins of Japanese tea remain uncertain, but it is believed that Kyūshū was home to some of the first tea plantations. Around the small town of Yame, Fukuoka, monks planted the first tea trees using seeds brought back from pilgrimages to China. Today, Yame tea ranks among the finest in Japan. This rural region in northern Kyūshū is a true paradise for tea enthusiasts.
Colour: Coppery yellow with amber reflections
Tasting Notes: Toasted complexity, warm and inviting with stewed apricot quince compote notes followed by subtle leather notes for complexity. Ideal for food pairing with slow roasted lamb.
Pairing Suggestions: Veal tenderloin, Morel mushroom risotto, beef with girolles, aged goat cheese & blue-veined cheeses
