This amazake, made from koji and ginger, is produced by Alexandra and Kôhei in the Pyrénées-Atlantiques, in Castetnau-Camblong.

Ingredients: Water, koji, fresh ginger infusion.

Recommended serving temperature: Chilled.

In Japanese, Ama has many meanings. The word refers to the Ama, the women of the sea, lineages of deep-sea fisherwomen who have been free-diving for probably thousands of years. While it evokes femininity and the ocean, it also refers to the sky, and to the divinity Amaterasu, the sun goddess (“she who illuminates the heavens”). The sun, the sky and water, threads that bind all life together, and, quite naturally, mother in Basque.
