Beautiful sparkling wine from spontaneous refermentation. Tasting notes: Osless Egin, a naturally sweet wine, stands out for its delicate balance. Currently still, this wine could evolve into a sparkling wine while retaining its aromatic richness. With only 30g of residual sugar, it gives the impression of containing only 10g, thanks to its beautiful acidity that perfectly structures the whole. Imanol Garay, originally from San Sebastián, is right where he sees his mountains. It all started with negociant grapes that he selected from both sides of the Pyrenees, French and Spanish. Then he gradually planted some vines. A cooper in a previous life, he was already traveling throughout France, tasting many things and drawing inspiration. He is driven by his intuition, listening to his vines and the vibrations that emanate from them. His wines are resolutely personal and vibrant... such a charming artist winemaker!
