Grape Variety: Pinot Noir

Terroir: 9.5 hectares of clay-limestone soil cultivated biodynamically, located in Volnay, Côte de Beaune.

Tasting Notes: A luminous and fragrant wine with aromas of peonies, sweet berry fruits, warm spices, rose petals, plum, and cocoa. Finely structured, with powdery tannins and a delicate, vibrant acidity.

While Pascal Roblet has always appreciated wines with substance, his focus today is no longer on structure but on fullness. This small biodynamic estate in Volnay, Côte d'Or, has completely rethought its vineyard practices, from ploughing to pruning and ground cover, with the patience to accept that the results will only become apparent after many years.

By encouraging the vine’s natural defences and maintaining plant cover, he promotes deep root development and nurtures the essential processes that sustain living soils, ensuring healthy vines in a preserved environment.

In the cellar, vinification is carried out with the utmost simplicity. Whole clusters are a defining feature of the estate’s identity, and extractions, though gentler, are prolonged, accompanied by extended ageing. While Pascal Roblet vinifies without sulphur, a small amount is added at bottling. His wines, uncompromising in their style, stand out for their density, depth, and ripeness, with a distinctive character in both whites and reds. Ageing takes place in Burgundy barrels for 12 to 18 months, depending on the cuvée, giving the wines a recognisable signature. The whites display pure aromas and vibrant energy, while the reds range from fruit-driven expressions to more structured and intense profiles, offering excellent ageing potential.

Pascal Roblet is a unique winemaker. His wines, both complex and delicate, remain deeply connected to their terroir, always striking the perfect balance. Their silky texture, subtle extraction, and refined oak influence shape a style where elegance and depth leave a lasting impression.

Today, his rare bottles are highly sought after by lovers of deep, dense Burgundies with great ageing potential. Indeed, this talented yet discreet vigneron tends some of the finest parcels on outstanding terroirs.
