Ah, February, a month for love 
, but also for wine fairs! Angers Loire DégusT, Wine Paris, and the Agricultural Show follow Millésime Bio, the major organic wine event in Montpellier, which took place at the end of January.
The intoxication of love, being giddy in the greyness of February, which we don't know if it will historically be the new hottest month in history...? Hoping that the mercury drops back down the thermometer like sap down the vine, to avoid early budding and the risks that entails.
Avoiding the pitfalls of love and continuing the Bacchic delights... what a program!
To start this February off on the right foot, Candlemas will be effervescent: for us, it might be Basandère cider from Domaine Bordatto, which handles apples and grapes with the same love and delicacy, or perhaps a Pet Nat from Domaine Monblanc, a new arrival at Cave du Palais; whatever the choice, the bubbles will be fine, delicious, and festive, or they won't be at all!
Domaine Monblanc is a domain that evokes thoughts of snow and mountains... but no, you're in the Gers, with the Saint-Orens family and their son Florian, who makes fresh wines like eternal snows, fluid and fruity, playing with his stoneware or terracotta jars, barrels, and stainless steel tanks to give finer, more modern tones to the old-fashioned Madirans.
La Porte Saint Jean is also in the spotlight with juices from the Saumurois region south of the Loire, always free, elegant, and ever deeper, which will require a little patience, like a lovesick suitor... but they will deliver unforgettable pleasures to those who know how to hold back ;);)
Another major event in the wine world in February is the famous Percée du Vin Jaune from the Jura, which, after 6 years and 3 months of oxidative aging under flor, releases one of the pearls of the French vineyard. A complex nectar of walnuts, spices, curry, and apple, it proves to be a magnificent gastronomic wine and offers majestic pairings.
Jura, a land of yellow wines, but not only: Savagnin and Chardonnay, grown on the Franche-Comté substrates, produce distinctive and unique white wines. Poulsard (or Ploussard), Trousseau, and Pinot Noir yield elegant, fresh red wines that are not without complexity. These grape varieties are perfectly mastered in their natural state by Domaines Buronfosse and Dolomies, a new arrival at the cellar, hooray!!!
February, Spanish style, it's possible!!! Often confused by their power, Spain is full of fresh terroirs offering wines of great finesse. This is the case for Galician wines from Fedellos do Couto and Forjas del Salnes, true champions of their appellations, superb wines with oceanic influences. We absolutely love them!!
Now let's go higher with Commando G and the Mentridana estate, two estates in the Sierra do Gredos, a mountain range between Madrid and Toledo, where black Grenache reigns supreme and benefits from wide temperature variations between day and night. This gives it an incredible distinction that will only improve with age. Claro que si !!!
