Lightly roasted or grilled poultry, particularly chicken or turkey with herbs, works well with the wine’s balance.

Benoît was a sommelier for several years in a former life, but after getting a bit tired of serving wine, he decided to make it himself! He then embarked on a training course at the Beaune high school, some internships in Burgundy, and gained experience with Eric Pfifferling at Anglore in Tavel, before finally settling in Faye d'Anjou on 7 hectares of beautiful plots and old vines. The vineyards are made up of Chenin, Grolleau, Cabernet Franc, and Pineau d'Aunis. In any case, working in the vineyard is really his passion, and it's what he prefers! He works with common sense, observes, practices cover crops, fills the gaps in his old vines with cuttings from his best vines, and pays special attention to the cup pruning of his vines. He also works with his two loyal draft horses, which help him maintain soil aeration! Of course, the winemaking process is very non-interventionist! You will find only one gram of sulfur at the time of racking. Benoît Courault's wines are natural, pure, and bursting with fruit!
