Tasting notes: A soft, yet resolutely lively wine, Theotokos waltzes on aromas of fresh exotic fruits, balanced by a revitalising liveliness that eclipses our perception of the wine’s 44 grams of residual sugar. The finish brings forth a delicate and refined sweetness that prolongs the pleasure with a subtle honeyed nuance.

Pairing suggestions: Pairs beautifully with a nicely roasted free-range juicy chicken with crispy skin.

The Domaine du Bois Sacré is one of the westernmost estates within the Jurançon appellation area, Lucq-de-Béarn. On this family farm, where polyculture still reigns (notably cattle farming), Laurent Saint Martin and his partner Pauline decided to create a wine estate to showcase their 4 hectares of vines. The name "Bois Sacré" is a translation of the Latin word "lucus," which gave the village its name and reflecting the spiritual dimension of the place. The vines are intelligently integrated into the farm’s microcosm: surrounded by meadows and forests, inhabited by sheep during winter, nourished with cow manure, and tended with plant-based preparations (in addition to a little copper and sulfur). The winemaking and aging processes, carried out between tanks, barrels, and concrete, with minimal sulfite usage, allow Laurent to infuse his wines with energy and depth.
