ETXE Capsule 2023 Blanc de Noirs VdF (Latour de France) 75cl Sparkling
Grape Varieties: 90% Grenache Noir & 10% White Grapes from 13 varieties, including century-old vines of Grenache Blanc, Grenache Gris, Carignan Blanc, Macabeu, Malvoisie du Roussillon, Clairette... and others.
Terroir: Schist
Vinification: Grenache Noir; Harvested on August 28, 2023. 75% destemmed and 25% whole-cluster fermentation. 15-day maceration with gentle pump-overs.
Whites; First harvest of the season on August 8, 2022. Direct pressing and cold settling. Fermentation at 20°C with light bâtonnage.
Tasting Notes: Ripe red and black fruits, almost jammy, with lovely tension and hints of white flowers.
🍷 Serving Temperature: 10°C as an aperitif.
Carmen Etcheverry and Martin Ballot have been winemakers since 2020 on 5 hectares of old vines, growing on schist soils in Latour de France, Montner, and Estagel, as well as on granitic arenas in Lansac. They have been certified in organic farming for over 20 years, as Carmen's parents were already growers!
They use plant-based treatments, diversify their production with barley growing between vine rows, and have planted fruit trees within the rows.
