Summer is finally beginning feverishly in some regions, and for others... the desire for a small blaze might be appreciated ;(;( The weather is playing with our nerves, a bit like current politics! Fortunately, wine allows us to escape and wander through France and beyond.
Numerous new arrivals, as pleasant as in previous months, and the ecological solution to warm up in case of another cold snap... Whiskies and Rum blends from the Distillerie des monts d'Aubrac "Twelve".
La Roche Buissière
Let's unfold our wings and land in the Vaucluse. A stone's throw from Vaison la Romaine, lies the village of Faucon and the lovely La Roche Buissière estate. Perched between 300 and 450 meters, surrounded by olive trees, the vines have only known organic farming since the 80s. And what can be said about the passionate winemakers who pamper them: Pierre, Laurence, and Antoine Joly express the authenticity of their terroir through sincere cuvées, always seeking a balance bordered by freshness. No chemical inputs, few sulfites at bottling, their cuvées are elegant photographs of their cozy nest. Airy!!!
Quatre Pierres
Ambivalent, ambidextrous, organic farming is practiced at the Quatre Pierres estate, located in the Cabardès region in Aragon, at the foot of the Montagne Noire overlooking Carcassonne and its fortifications. Why so many qualifiers in the preamble? Because this vineyard straddles two cultures, two very distant playgrounds, yet so complementary here: a true link between the Ocean and the Mediterranean! So don't be surprised if the proposed cuvées include viognier, chenin, and petit manseng... in varying proportions for the whites, Merlot, Cabernet Franc, and Syrah for the reds! Juices that, despite appearances, remain very distinctive, contemplating the ramparts of the ancient Cathar city. Delicately heretical!!!
Clément Perseval
Sit at the round table, gather brave knights (or not) and open a Clément Perseval champagne ;) The evening promises to be epic!! On his lands in Chamery, Clément, after flitting among other excellent Champagne winemakers, offers us true and beautiful expressions of his bubbles that are turning heads worldwide. Frank, distinguished, so close to their terroir, they will undoubtedly be gastronomic partners of choice for poulardes, veal, fish, or shellfish. Peasant nobility!!!
Distillerie Twelve
Aaah Laguiole, aaah Aubrac, wild land of cheeses, cows, fine blades... and whiskies. A land of high-altitude peat bogs, Aubrac saw the crazy project of 12 acolytes who decided in 2014 to produce their own whisky on these moors, reminiscent of the tormented landscapes of northern Great Britain. Twelve is a distinguished distillery projecting a certain idea of Aveyronnais excellence. Still players, cask breeders, balanced blenders, the 12 apostles of Twelve offer distinctive whiskies and complex rums that will delight the most discerning palates. Captivating!!!
Vinegar
Far from supermarket shelf standards, dive into the world of this product as electrifying as it is profound: vinegar. Nuanced by the touch of the vinegar maker and a quality raw material, wine. And that's where the crucial difference lies: to make good vinegar, you need good wine. The wine is left in contact with air to create acetic fermentation and turn the wine into vinegar. Then it is mellowed in other containers (in demijohns in the sun for Guinelle). The amount drawn off will be replaced by another wine, following a solera system. Eternal. Thanks to Banyuls vinegars from La Guinelle or the famous balsamic vinegars from Granhota, add a gastronomic dimension to your summer salads, deglaze meat juices to prepare a sauce, or simply spray it on oven-baked fish or barbecued meat. Exhilarating!!!
